“Our Not Bad” Roasted Chicken

A flavorful and juicy whole roasted chicken seasoned with Prohibition’s “Our Bad” Seasoning. Infused with garlic, lemon, and fresh poultry herbs, this dish pairs perfectly with roasted potatoes and optional root vegetables for a hearty meal.

What You'll Need:

  • 1 whole chicken
  • 1 whole lemon
  • 1 bulb garlic
  • 2 lbs red potatoes
  • 1 bunch of poultry herbs
  • Olive oil
  • Prohibition “Our Bad” Seasoning
  • Salt & pepper to taste
  • Root vegetables (optional)

How To Prepare

Preheat Oven:

  • Set the oven to 400°F.

Prepare the Chicken:

  • Clean out the inside of the chicken.
  • Cut the top off the bulb of garlic.
  • Pierce the whole lemon several times with a knife.
  • Place the garlic, whole lemon, and poultry herb bunch inside the cavity of the chicken.

Seasoning:

  • Generously rub olive oil over the entire chicken.
  • Coat the chicken evenly with Prohibition’s “Our Bad” Seasoning.
  • Season with salt and pepper.

Prepare the Vegetables:

  • Toss the quartered potatoes and any desired root vegetables in olive oil.
  • Season with “Our Bad” Seasoning, salt, and pepper.
  • Arrange the vegetables around the chicken in the roasting pan.

Roasting:

  • Place the chicken in the oven and roast until it reaches an internal temperature of 165°F.
  • Let rest for 5 minutes before carving.

Serve:

  • Slice the chicken and plate it with the roasted potatoes and vegetables.
