What You'll Need:
- 2 lb. bone-in pork roast
- Prohibition “Our Bad” Seasoning
- Olive oil
- Salt and pepper to taste
- 4 red potatoes, washed and quartered
- 6-8 carrots, washed and peeled
How To Prepare
Preheat Oven:
- Preheat your oven to 350°F. Spray a broiler pan with cooking spray or rub it with olive oil.
Prepare the Pork:
- Place the pork roast rib-side down on the pan. Rub a generous amount of olive oil over the entire roast.
- Season with a generous amount of salt and a normal amount of pepper.
- Generously sprinkle “Our Bad” Seasoning all over the pork.
Season the Vegetables:
- In a bowl, toss the quartered potatoes and peeled carrots with olive oil, salt, pepper, and a sprinkle of “Our Bad” Seasoning.
- Arrange the vegetables around the pork roast on the pan.
Cook:
- Place the pan in the oven and cook until the pork reaches an internal temperature of 138°F (use a meat thermometer to check).
- Once done, let the pork sit for 5 minutes before slicing and serving.
